chaudfroid of chicken
Just in case you have a desire to nibble on a tasty treat that was served at Kaiser Wilhelm's wedding. Here is a recipe for chaudfroid of chicken:
That's a very simple chaud froid - suitable perhaps for the Kentucky housewife, but not, I think, for the Kaiser.
I envision him with a more traditional chaud froid, with the chicken coated in a white aspic sauce (rather than coated in bechamel), and decorated with vegetable garnishes in rather elaborate form before it is cooled and allowed to gel before serving.

boeufdaisy, I found a recipe on Google that is very close to how you mentioned the dish should be. There is aspic, and mayonnaise and celery. Still, it seems like an everyday type of dish for an emperor, but maybe back in those days it was fancy and exotic. Certainly sounds delicious though! A good chicken salad is heavenly.
